Check "signal strength". The two values are RSSI (more is better) and BER (less is better):
AT+CSQ
Query and manipulate GPRS attach status:
AT+CGATT?
AT+CGATT=1
AT+CGATT=0
List the IP-addresses of any active PDP-contexts
AT+CGPADDR?
Show IMEI, IMSI and MSISDN:
AT+CGSN
AT+CIMI
AT+CNUM
(Note: very few devices I have tested can show the MSISDN)
If your device is an actual telephone, and not a modem/dongle, you can have some fun by switching the phone language:
AT+CLAN="en"
AT+CLAN="sv"
